A few months ago, Katy from Free Range Katy made this chicken salad, and I was absolutely obsessed with it. I made in multiple times in one week. I loved the addition of shredded carrots because it  makes your protein go so much further. I used this same idea in my Carrot Ginger Meatballs. Last week, I went to make Katy’s recipe, again, and realized I didn’t have all the ingredients because I had made the recipe so many times. I made do with what I had on hand, and after the first bite I knew I had to share this pomegranate chicken salad. It comes together so quickly and is the perfect way to use up leftover chicken! It is also served cold so it makes a great lunch to bring to work.

Pomegranate Chicken Salad | Plaid and Paleo

Pomegranate Chicken Salad

Ingredients

  • 1 lb cooked chicken breast, shredded
  • 2 cups carrots, shredded
  • 1/2 cup pomegranate seeds
  • 1/4 cup red onion, diced
  • 1/4 cup macadamia nuts
  • 1/2 cup paleo mayo, or Sir Kensington
  • 2 tbls lemon juice
  • 1 tbls dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp pepper

Directions

  1. Combine all ingredients together in a large bowl.
  2. Serve over baby spinach or in lettuce wraps.
